LAURA - Accounts, Queen of Background Preparation and Orders
Laura really is the Queen Bee. Super organised, thorough and more hard working than the Egyptians during the Pyramid days, she gets the job done. Oh and she is best multi-tasker EVER. This Queen Bee has only recently joined the gang and we don’t know where we would be without her. She previously was joint owner in a very successful property business but before then she ran the bar whilst Ian ran the kitchen in the days when pubs were full of smoke, £50 notes and babycham and Liebfraumlich. Laura now takes on the unenviable task of getting accounts paid and organising the multitude of paperwork that a food business now needs to meet. So, when you see her always be nice, she has the strings to the money purse....
GEMMA - Organiser, Marketing (really Dogsbody)
As a fat 1 year old baby weighing in at over 30 lbs and a lack of any real hair until she was 3, Gemma realised that food came first and all other pleasures could wait a while. Gemma has been involved within the catering industry since birth. A family history in pubs and teenage years spent in her local restaurant, she was determined to re-enter the industry after a degree and years in the financial world. When the travel bug became too much of a distraction, she fled overseas to Argentina where she learnt how to make a proper asiado, worked a wine vintage and got lost in Australia for a couple of years working at a famous delicatessen in Melbourne. You will most likely see Gemma behind the stand, serving customers, smiling sweetly and keeping her mane of hair (which finally decided to grow) kept up.
DARREN - Pan Operator, Health, Safety + Hygiene Expert and Van Driver
Growing up in country Australia, Darren quickly understood that the route to happiness was a cold beer and a good barbie. After falling in love and flying to the other side of the world i.e. England, he has managed to continue to follow these guiding principles. Only now he expertly prepares all the marinades for the business; looks after our beloved grill pan and ensures our unit is spick and span (the beer now has to wait....) You will most likely see Daz behind the grill or stall, with a no worries attitude and an ability to juggle stones better than a circus performer.
IAN - Chef Extraordinaire, The Chief, Secret Ingredient Professional and Cheese Lover
Ian was born to a butcher and a landlady so it came as no surprise that food has always played an important part in his life. After leaving catering college and being collared into cooking 200 chicken in a basket in the 1970's, Ian took a break from the industry and delved into other careers. It was a chance holiday to the cognac region that reignited his flame for cooking ending up with him buying a house in the Poutiou Charentes region and rediscovering the french love for terroir. Ian now brings his experience of food to the helm retailing cheese quicker than a frenchman can say adieu.
