A luscious, creamy cheese with a richness from the Guernsey milk that the Wigmore's buy from a locally sourced dairy. Annie came from a laboratory background before honing her cheese making skills over seven years. She can certainly be regarded as a perfectionist as she makes two other stunning cheeses!
Waterloo has a wonderful creaminess throughout and when young it holds a mild taste maturing into a more richer flavour. We prefer the latter and generally retail it when it is a little older and displays a golden colour.
