The first ever Caerphilly to be made in the West Country, the dairy only recently moved this summer from Wales with already fantastic cheese being produced. Made in the traditional way with hand turn presses and moulds, it is matured for approximately 2-3 months to create a mild flavoured cheese. Although it has more subtle flavours, we adore tasting this cheeses at different aged periods. When young it is firm, more lactic and light in colour. This develops over time into more savoury notes with a creaminess developing and a mushroom floor smell.
