Cows Milk, Pasteurised, Animal Rennet

We bumped into Arthur during the CLA Game Fair at Blenheim Palace earlier this year. It was very hot, the cheese was soft and stinky (our idea of heaven!) and we tried this beautiful cheese called Mayfield.  It transported us to the cooler Swiss mountains and our love affair began with this fantastic cheese maker.

Mayfield is made in 18kg wheels and holds fantastic cracks and holes through maturation. Sweet and nutty it has a great depth of flavour with caramel yet also savoury notes. Its holes are formed by pockets of gas produced by bacteria during the maturing process. 

Creamy,on the palette yet developing into a strong flavour, this cheese matches perfectly with a sweet chutney such as quince paste or dark chocolate.
