Originally made into 20kg blocks which are then matured for 12 months and remilled into assorted shapes and sizes. This cheddar is unusual with its sweet/salty tang and also its softness (it is scoopable if left out of the fridge). Customers adore this cheese for the depth of flavour and length on the palette with relatively high acidity it delivers a strong taste and mouth feel.
