A delightful soft, fresh goats cheese made using Saanen, British Alpine, Toggenberg and as Oliver says, 'the odd Anglo Nubian or two!....' Childwickbury is a rindless cheese that has a wonderful mousse like texture. A light flavour with lactic, zesty notes it work fantastically in salads particularly beetroot, roasted peppers and olives.
