Made at Ram Hall, this cheese is regarded as a hallmark for British cheese making. It has a fantastic granular texture and a real complexity with subtle flavour and soft acidity. The family hold a flock of Friesian and Dorset sheep that allows them to milk and produce cheese all year round. This means that Berkswell displays flavours, textures and aromas that change with the seasons. The cheese gets it's unique shape from the use of colanders that it is pressed and squeezed into. It is then rubbed with dry salt, aged on wooden boards for around 4 months until it is selected for retail.
Flaky, dense texture this cheese works perfectly with quince paste.
