Made by Louis & Jane Grubb, Co.Tipperary

Cashel Blue is the result of much hard work and determination from the Grubb family supported by a team of 20 people all living in the local area. Established in 1984, Jane Grubb experimented for many years before finally creating a beautiful blue cheese that is rich in flavour. The rind, uniquely is untreated and edible which allows the paste to break down producing a bigger depth of flavour.When young it has a white paste which evolves into a yellowy colour displaying more indulgent flavours. 

The end result is a moist, creamy cheese with high blue veining and a spicy finish.
